Energetically, wet cooked rice strongly nourishes Stomach Yin and fluids and the ginger harmonizes digestion, resolves bloating and phlegm</span><span style="letter-spacing: normal; -webkit-text-size-adjust: auto; caret-color: rgb(45, 43, 34); color: rgb(45, 43, 34); font-family: Enriqueta, serif; font-size: 14px;">. </span><span style="letter-spacing: 0.02em; background-color: transparent; -webkit-text-size-adjust: 100%;"><br /></span><br /><strong>Ingredients</strong><br />Serves 4<br />1cup white rice<br />1/2 teaspoon sesame oil<br />2 cups chicken stock or bone broth<br />2 cups water<br />Pinch pepper<br />Pinch salt<br />11/2 tablespoon ginger chopped<br />1 1/2 tablespoon garlic chopped<br />3 sticks spring onion finely chopped 500g Chicken thigh chopped to small pieces Soya sauce<br />a few drops Sesame oil<br />Optional: Chinese bok choy, cabbage<br /><br /> <strong>Method</strong><br />Lightly fry ginger, garlic until lightly golden Add half of the spring onions, fry for few minutes Add Chicken and brown but don&rsquo;t cook through<br />Wash rice 3 times<br />Add stock and water and boil for 5 min<br />Then low -med heat to a gentle bubble to slowly cook congee Add optional vegetables<br />Add water when needed to make a consistency of soupy rice. Australia is experiencing unpredictable fires, we watch the impact of the novel coronovirus on the world and statistics indicate that 1 in 2 Australians will be diagnosed with cancer by the age of 85.   It is at this time where my nervous system needs to be calmed.  I am finding doing more mindfulness meditation practice helps me to make sense of all this news.
