Rice Congee

Below is my recipe for Chinese Rice Congee. It is a traditional meal to have for digestive upset or when you feel the flu might be starting. Energetically, wet cooked rice strongly nourishes Stomach Yin and fluids and the ginger harmonizes digestion, resolves bloating and phlegm.

Ingredients
Serves 4
1cup white rice
1/2 teaspoon sesame oil
2 cups chicken stock or bone broth
2 cups water
Pinch pepper
Pinch salt
11/2 tablespoon ginger chopped
1 1/2 tablespoon garlic chopped
3 sticks spring onion finely chopped 500g Chicken thigh chopped to small pieces Soya sauce
a few drops Sesame oil
Optional: Chinese bok choy, cabbage

Method
Lightly fry ginger, garlic until lightly golden Add half of the spring onions, fry for few minutes Add Chicken and brown but don’t cook through
Wash rice 3 times
Add stock and water and boil for 5 min
Then low -med heat to a gentle bubble to slowly cook congee Add optional vegetables
Add water when needed to make a consistency of soupy rice. Ready when the rice is fluffy
Serve into bowl and garnish with spring onion
Flavour to taste with soya sauce and a couple drops of sesame oil
Keep in the fridge for 2 days or freeze
